12 DAYS OF CHRISTMAS: Alternative turkey recipe for those who want something different

It’s one of the best parts of Christmas Day, but it can also be the most stressful.

So to help you make your Christmas dinner perfect, we’ve asked award-winning chef Robert Stordy for some hints and tips.

Today’s video sees Robert providing a recipe for a turkey escalope as an alternative to the traditional full roast dinner. Full recipe below.

Recipe

Pan fried turkey escalope, cranberry and port compote - Serves 2

Ingredients:

15g sugar

35ml port

15g butter

75g cranberries

2 turkey escalopes, 120g each

Little flour

Oil for frying

Salt and mill pepper

Method:

1) Place the sugar, butter in a small pan, heat gently until the sugar starts to colour slightly, add the port and simmer gently until a thin syrup consistency, add the cranberries and poach gently for 1-2 mins, do not overcook or they will go mushy

2) Season and coat the turkey escalopes in the flour, shake off excess and shallow fry in a little hot oil until golden brown on both sides

3) To serve: Place a turkey escalope on to a warmed serving dish, spoon the cranberries on top and drizzle around with the sauce
